About

Sokoto is the historic heart of kilishi production — Nigeria's traditional dried and spiced beef jerky. Made by Hausa-Fulani pastoralists, kilishi involves sun-drying thin slices of beef and coating them in a groundnut-and-spice paste before roasting. The preservation technique allowed meat to survive long journeys across the savanna and remains an important food-trade commodity.
